Crispy on the outside, chewy on the inside, these ginger and molasses spiced cookies were my favorite holiday treat growing up. Easy to veganize with a couple of simple swaps, I hope you love these cookies too!
Ingredients/ shopping list:
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- ½ teaspoon salt
- ¾ cup vegan butter
- 1 cup organic cane sugar, plus ¼ cup to roll cookies in
- ¼ cup applesauce
- ⅓ cup molasses
- 1 tablespoon water
Cooking Instructions:
Step 1.
In a large bowl, mix together flour, baking soda, ginger, cinnamon, cloves, and salt.
Step 2.
In another bowl, combine vegan butter and 1 cup cane sugar. Then, mix in applesauce, molasses, and water.
Step 3.
Gradually mix the wet ingredients (bowl 2) into the dry ingredients (bowl 1) until well combined. The mixture should be slightly sticky.
Step 4.
Pour ¼ cup of cane sugar onto a plate. Coat your hands in flour and roll the dough into small balls, then roll each ball in cane sugar until coated.
Step 5.
Bake at 350 degrees for 8-10 minutes. Let cool, and enjoy!
